This bright orange soup is completely vegan. We like to serve it with some yogurt or creme fraiche, but you can choose your own vegan dairy substitute or leave it out completely. We love to make our carrot ginger turmeric soup with a sweet potato to enhance the sweet taste. The fresh ginger gives it a spicy hint. Turmeric is really having a moment right now, but has been a part of the YogicDiet for ages.
