I simply love mushrooms. From button mushrooms to cremini, portobello and chanterelle, to enoki and porcini. But, most of all I love shiitake mushrooms. My family members on the other hand are not so fond of any type of fungi. Where I like to eat them simply stir fried with some garlic or in a deep dark mushrooms soup, for the others I’ll have to mask them in pasta sauces and mixed veggie stirfries.

That is why I made this simple, super fast (5 minutes!) lunch-for-one! But if you want to make it for two, just double the recipe.

The recipe will soon be featured in our app, come the next update, but if you like to make it already… be my guest, it really is simple and delicious.

Heat oil in a wok or frying pan and add one person portion of sliced shiitake or mini whole ones and 1 large grated garlic clove. Stirfry for about a minute. Then add about a tablespoon of low sodium tamari or soy sauce and half a teaspoon of toasted sesame oil. Stirfry for another 1-2 minutes and done! Serve with salad greens, avocado and a sprinkle of sesame seeds.
